Sasa leaf is the green leaf which is being used as a decoration in a Japanese sushi dish. It is the divider used for the sushi dishes being served.

Sasagiri is also used by chefs to practice their carving skills and use of knives.

Watch this video as the master chef of Shunraku Sushi Restaurant in Hokkaido made a sasa leaf carving of a turtle. They believed that a turtle can live for ten thousand years. The legendary turtle in Japan is called minogame, which symbolizes good health.
