Fugu or pufferfish is a delicacy in Japan. It's prepared by the highly trained chefs to ensure that the poisonous parts have been removed. The pufferfish poison is highly toxic (more than cyanide) as it's a neurotoxin. The chefs have to study various types of pufferfish and identify the poisonous parts. According to Chef Yutaka Hatori, the poisonous parts are the liver, ovary, gallbladder, and eyes and that poison varies depending on the species. The Japanese government tightly regulates the preparation of pufferfish. The overfishing and difficult preparation of the pufferfish increases the price of the pufferfish dish.
