Umeboshi is one of the variety of pickled fruits in Japan. Umeboshi is the pickled ume or more popularly known as the Japanese apricot or plum blossom. The word is sometimes translated to English as the "Japanese salted plums." Because of its extreme sourness and saltiness, it is often served as side dishes to rice meals. They are also sometimes mixed with the rice balls or onigiris eaten during breakfast and lunch.
The umes are actually dried first before being pickled. Some make pickled ume without drying them and they call them umezuke.
