In the city of Kurume in Fukuoka Prefecture, stands a 65-year-old ramen restaurant called Kurume Ramen Seiyoken. The founder of the restaurant started a street stall wherein an original kind of ramen was served. Kurume city, then, became the homeland of Tonkotsu Ramen in Kyushu.
The dish is known for its rich, thick and creamy broth. It usually takes a full day to make a traditional Tonkotsu Ramen, but in Kurume Ramen Seiyoken, the boiling process alone takes about 3 days.
