Senbei or the Japanese rice crackers are popular as morning, afternoon or midnight snacks. Often served with green tea, these crunchy food snacks are perfect for serving to your guests. There are two ways to cook the senbei: either by baking or grilling. The grilling technique is the traditional one, with the crackers being brushed with a flavored sauce as it gets cooked. The sauce is most often composed of shoyu or the Japanese soy sauce and some mirin or the low-alcohol content rice wine. For added flavor, nori or flattened seaweeds are wrapped around the senbeis. For those who don't like nori, salt can be an alternative.
