Ramen is not the only noodle specialty in Japan. There is another dish which uses noodles made from wheat flour. The name of this other famous noodle dish is udon. Kagawa Prefecture in Japan has actually made its own version of the udon noodles, and called it the sanuki udon. This is derived from the old name of the Kagawa Prefecture, which is the Sanuki Province. The Sanuki udon is distinguishable from all the other udon noodle dishes because of its square shape and flat edges. The whole of the Shikoku region now has their own variety of the Sanuki udon.
