Otoro don is a variety of sushi made from the underbelly of the tuna or maguro, as the Japanese call it. The otoro is the fattiest part of the fish therefore it is heavy with umami flavor. The otoro is expensive because it comes from the lower belly of the fish towards the head.
The otoro is one of Japan's delicacies because of its unique eating experience. The steak of tuna meat fuses with the fatty tissue to bring out a fresh flavor. It melts in your mouth, almost like butter, giving you a rich and creamy explosion of the sweet, salty, and umami.
