It's always a risk to not know what's coming for you, but for the Japanese, it's often for the best. OMAKASE!
Omakase is a Japanese phrase which means, "I will leave it to you." This is a tradition where instead of ordering from the menu on your own, you let the chef choose your order. This is often applied to sushi restaurants where the chef is able to flex his culinary talents by expressing creativity on the dishes he gives you.
Omakase works best at sushi restaurants because the ingredients are varied and always fresh. The best view is to sit near the chef so that you can have interaction and you can also look forward to what he's making for you. Omakase can be a gamble but the customer always receives the highest quality of fish compared to a single meal.
