Once the temperature started hitting below 10 degrees, it is time for some hot food called oden. This is the traditional Japanese hot pot dish called oden. It is mainly composed of boiled eggs, processed fishcakes, konjac potatoes, tofu, some daikon or radish. These are cooked in dashi broth, which is a miso-based soup, seasoned with shoyu or the Japanese soy sauce. Oden is often served with karashi, a Japanese condiment that is a powder or paste form of the Brassica juncea. In Shizuoka, their oden is mainly cooked in a darker-colored broth, which is beef stock seasoned with dark soy sauce.
