Matcha has been one of the trademark products of the Land of the Rising Sun. Matcha is actually a specially grown, processed and finely-ground powder form of green tea. There have been two special procedures in the creation of the Japane matcha. One of the them is shade growing. The Japanese green tea plants are actually grown under the shade, and not under the sunlight, for about three weeks. Because of this, the matcha plant or the Camellia sinensis produce more theanine and caffeine, making the matcha more bitter. The second procedure is the removal of stems and veins during the processing.
