The way of tea, known as Chado/Sado is a particular ritual in which matcha (powdered green tea) is being served to the house guests. Matcha is a finely ground powder which is grown in shaded fields, and the processed green tea leaves are harvested once during spring time. In May, the leaves are ready to be picked up, and later dried out, which are then called tencha. The tencha will be placed in matcha stone mills to make a fine ground powder. Using stone mills are the best to bring out the matcha’s fine flavor and aroma, because of the friction that produces heat. The final step is putting the fine ground matcha powder into a container.
The bamboo tea whisk is the traditional mixer of matcha. The materials used in making whisks are a pliable type of bamboo, and its bristles are called “ho”. You can use a piece of bamboo, depending on your type of size to be split into 16 splines, and cut based on how thick you wanted them to be.
