Nagoya is not only known for the bands Spyair and Coldrain. It also boasts of a variety of food items that are generally only in Nagoya.
One of them is Nagoya's flat noodles called the kishimen. The Chinese characters used when writing the word "kishimen" literally means "noodles of go stone" or those stones used in Japanese chess game pieces. Being situated in the center area of Japan, the broth of this dish has been a mix of the Kanto and the Kansai flavors. What makes it Nagoyan is the dash of sweet sake. It is also served with sliced kamaboko steamed fish paste, bean curds, some vegetables, topped with dried bonito shavings.
