Kikurage is the name for the edible wood ear mushroom. It's also eaten in other parts of the world such as Asia. The mushroom is added in Japanese dishes - Ramen, stir-fried, salad, chilled cucumber, and soups. Wood ear is rich in protein, polyphenols, Vitamin D2, vitamin B complex and low in calorie content.
