In Japan, there is a special dish made from the roots of the lotus plant. Upon close inspection, the lotus root has holes in it. In Kumamoto, a specialty food has been made by filling in those holes with mustard and miso paste. It is called the karashi renkon. It is then sliced into thin portions and then fried. The frying makes the lotus crunchy, making this a lovely snack, as coupled with mustard. This healthy food is also perfect with rice as a whole meal, and to complete the set, you can also drink some sake or rice wine while enjoying your crunchy lotus.
