Kaiseki is known for its fussy preparation and presentation. This is the most expensive type of Japanese cuisine and can have more than 14 courses. 

The Kaiseki restaurants usually offer private rooms where you can eat with a wonderful view of a Japanese garden. 

The kaiseki dishes are guided by Japanese aesthetics since it is a sophisticated cuisine. Here are the common courses of Kaiseki:

• Sakizuke or the appetizer
• Hassun which sets the theme of the meal
• Mukozuke or the seasonal sashimi
• Takiawase, the vegetables served with fish, meat or a tofu
• Futamono, a small dish served in a container with a lid
• Yakimono or the grilled seasonal fish
• Suzakana or a small fish
• Nakachoko, a small acidic soup that is used to clean the palate
• Shiizakana, a hot pot dish
• Gohan, rice with seasonal ingredients
