Soba is a kind of noodles made in Japan. They are made from buckwheat flour. Some soba food makers combine buckwheat and wheat flours to make soba.
The soba should not be confused with udon, another kind of Japanese noodles. Udon are thick noodles made of wheat flour alone. Soba comes out as thin noodles, which can be served hot or cold. The chilled soba is served with a dipping sauce, while the hot soba is served with hot broth, just like other noodle soups. Different regions and prefecture in Japan has developed their very own recipe of the Japanese soba.
