Shabu-shabu is a Japanese dish in a hotpot, with thinly sliced meat and vegetables boiled in water with dipping sauces. It is one of the traditional Japanese ways of eating meat. The term shabu-shabu is derived from the sound created when the ingredients are being stirred in the cooking pot.
Most people love to eat this food not knowing how to eat it properly. Sakura Yagi, the Operations Manager of Shabu-Tatsu at East Village New York City shows the right way to eat shabu-shabu.
The first thing to do is add the vegetables to give the water some flavor. Once cooked, vegetables should be dipped in the sauce so it cools down and to give a more satisfying flavor. The second thing to do is cook the meat for about 10 seconds. Yes, just 10 seconds. Swish it around so it’s evenly cooked. Don’t forget to skim off the fat to take all the impurities out of the broth. Third thing to do is to dip the meat and veggies in the sauce and rest them on the rice. If you still have some space left on your stomach, you can drink the broth.
