Shizuoka Prefecture is known as the largest producers (in terms of area) of green tea in Japan. Green tea is defined different from the usual; it is the type of tea that is made from Camellia sinensis leaves that have not undergone the same withering and oxidation process used to make oolong and black tea. Planting green tea leaves take five years. The cutting season usually takes place from late April to the end of May. There are three or four green tea harvest seasons.
