Goya Chanpuru is a recipe from Okinawa. It's a stir-fried dish made by mixing, sliced bitter gourd(melon), tofu, eggs, sliced meats, salt and pepper. Although it's known for its bitter taste, the vegetable-fruit is very nutritious as it contains magnesium, iron, vitamin C, and potassium. The vegetable-fruit is known as one of the remedies for diabetes. According to studies from the journal of Ethnopharmacology, bitter melon aided in reducing fructosamine levels of Type 2 diabetic patients.
