Chanpuru is the kind of dish that is native in the Okinawa Prefecture in Japan. Chanpuru is actually the word from the Okinawan dialect meaning "something mixed." Chanpuru is a stir fry dish of different ingredients. One of them is the goya chanpuru or the bitter gourd chanpuru or bitter melon stir fry dish. The goya chanpuru is often tossed with tofu, egg, pork, spam, fish, bean sprouts, and seasoned with salt to counter the bitterness of the main vegetable. The goya chanpuru is said to be the most quintessential or the most common kind of chanpuru.
