The Geoduck is a large, edible saltwater clam. The name is derived from a word that means ‘dig deep’. Known as mud duck or king clam, the Geoduck is an oversized, phallic-shaped mollusk. The geoduck has two parts, a neck and a breast. The neck is prepared raw, dipped in hot then cold water respectively. The breast, on the other hand, is boiled.
Described as having a savory flavor with a crunchy texture, the geoduck is perfect for sashimi. Dipped in soy sauce and wasabi, the thinly sliced meat can now be eaten and enjoyed.
