Ganmodoki is a dish with the creamy soy milk block or tofu as the main ingredient. The preparation of the tofu makes it taste like goose, thus it is named as such because the literal translation of ganmodoki is "artificial goose."
The dish is actually a fried tofu fritter. A batter of tofu, carrots, lotus roots, burdock and other vegetables is prepared. The batter is then shaped into bite-sized ones or as round patties and then deep fried. During the Edo period, the ganmodoki dish is actually composed of stir-fried konjac wrapped in tofu, and then fried until golden brown.
