Hiroyasu Kayama, considered to be Japan's greatest bartender, started Ben Fiddich in 2013. Kayama used to work as the head bartender of Ambers, another known bar in the Nishi-Azabu district, located in Minato, Tokyo.
Kayama has long been interested in traditional elixirs and herbal liquors. Because of this, Ben Fiddich promises the best cocktails from the said class of drinks. He often uses ingreditents like anise, fennel and wormwood, which are grown straight from his backyard in Chichibu, Saitama.
